I usually don’t make a big fuss about appetizer course when entertaining unless it is a special occasion. And such occasion aroused recently while entertaining a business colleague of my husband. When in doubt, I usually make an appetizer plate of various items: meats, veggies, cheeses, fruits and crackers. This way I know everyone, including the little ones, will find something to nibble at. Since my only information was that our guest’s favorite cuisine is Italian; I decided to make an extended antipasto.
I settled on grilled Bockwurst and Salami as meat choices. Cheese selection included Mozzarella, Bavarian Blue, Swiss Alpine, an aged White Cheddar and an Apricot semi soft cheese (I know…I went a bit overboard with cheeses for only 3 people). Grilled zucchini and yellow peppers, heirloom tomatoes, fresh basil, olives, grapes and an assortment of crackers and warm mini whole wheat pitas completed the ensemble.
Arranging all the above on a simple 2-tier plate stand made for a simple yet elegant presentation. It was enjoyed by all and what little remained was paired with a yummy salad the next day for dinner.
