one of the main challenges of Summer grilling, especially for the meat lovers, is what or how to marinate meats. Most opt to stock up on various marinades. While I have nothing against using ready-to-use marinades, I mostly make my own, often last-minute,  concoctions. It is not difficult to come up with great tasting marinades utilizing pantry items. It is a cheaper and much healthier option.

Here is one my favorites. Healthy, tasty, quick to put together and highly versatile! It is great on chicken, lamb or beef.



makes enough to marinade about 1.5-2 pounds of meat

Yogurt> Plain Low Fat 1 Cup
Turmeric Powder (or ground Saffron or Paprika) 1 Tsp
Herbes de Provence (or your favorite dried herb) 1 Tsp
Cumin Powder 1 Tsp
Fresh Lemon/Lime Juice 2+ Tbsp
Olive Oil (use more or less depending on meat’s fat content) 1-2 Tbsp
Sea Salt (or Kosher Salt) 1 Tbsp
Black Pepper 1 Tsp+

  1. Mix all ingredients well.
  2. Place meat in a zippered plastic bag or bowl. If using boned chicken pieces, make small slits with a sharp knife before marinating.
  3. Pour the marinade over and toss well, making sure every piece is well coated.
  4. Seal and marinate in refrigerator for at least 1/2 hour and upto 8 hours.
