It was one of those days!
You know about them; I am sure. Those days that don’t seem to end. Those days that you cannot wait to get home, get out of your clothes and into your elastic everywhere clothes and have someone serve you the best cup of cappuccino ever; followed by a fantastic massage.
Well, I had one of those days and the best part of it was unlocking the door and being greeted by my dog. Her never ending energy actually instilled some in me and I managed to play with her for a little time in the backyard.
As I sank in my comfy chair looking over our garden, I remembered my husband was coming home with a couple of pieces of salmon for dinner. Oh, no….cooking seemed to be the final torture of the day. But could not trade my beautiful veggies and the much needed dose of Omega-3 for a quick take out!
So, I rolled up my sleeves and opened the fridge to see which ingredients wanted to be cooked first (or rather, were rotting quicker). The little eggplants and green peppers including the cutest ever from our garden were the winning team.
They were washed and seasoned with salt, pepper and olive oil for grilling. Thank goodness for washed frisee which I tossed with tomatoes, purple radishes and red and orange carrots in no time at all. A little olive oil from my jar of sun-dried tomatoes, lemon, salt and pepper made the salad dressing.
Next, the salmon fillets. No time or patience to do much with them. They were coated in my 3-pepper rub right before Soheil (the hubby) grilled the heck out of them (we like our fish pretty well dead).I had one last minute thought, bruschettas. I don’t remember the last time I had them and the few semi-fresh ciabatta slices had bruschetta written all over them. They were dressed in a little olive oil, salt and pepper and sent to the grill master. Throughout all this combined effort; we were fueled by a crisp and bubbly bottle of Prosecco.
In less than 30 minutes – the same amount of time to waste on Pizza delivery- we had a feast.
